Overview:
The meat grinder is the most critical piece of equipment for extracting salt-soluble proteins in meat processing. Its function is to rapidly extract proteins and, at temperatures between 2°C and 8°C, coagulate the proteins and water from the raw materials into a gel, forming a viscous emulsion.
This process works by using six blades mounted on a high-speed shaft to rapidly chop the meat mixture within a variable-speed disc bowl.
Its ability to extract salt-soluble proteins is unmatched by other equipment; a high-quality cutter can achieve an extraction rate of up to 68%.

The TY series cutters utilize the high-speed chopping action of rotating blades to process meat and ingredients into minced meat or meat paste. They can also uniformly mix ingredients, ice chips, and water with minced meat or meat chunks.
