The tenderizing principle of this machine is derived from and refined based on relevant European and American design concepts. It utilizes high-density, specially designed fine blades with an oblique cut to perform deep, instantaneous fiber cuts on the beef being processed,

thereby disrupting the muscle fiber structure from multiple angles to achieve optimal tenderness without altering the beef’s shape.
